Some of my environment work for the game "Captain Sabertooth and the Magic Diamond", release in 2020 on Steam/Nintendo Switch. It's a fairly big game on a shoestring budget, so there were many corners cut in order to get the art done. It turned out ok I think, a bit rough around the edges, but not too bad.
The level design was done at a separate company(Rock Pocket Games), and we were 2 artists that did the level art. We split the task about 50/50(Models/textures/layout/lighting). We built a pool of assets that could be reused across multiple levels. There was no time to do several one off pieces. For the play area, we used tetris like shape blocks(natural rock/manufactured stone/tree branches). We tried to connect those blocks to the surronding landscape, so it looked somewhat natural (Although we had to cop out at times, and just go with floating platforms). But the idea was to make the environments look as natural as possible, even though we're limited to a 1x1meter grid pattern, and constructing the levels from modular pieces.
I did the layout and lighting for these environments. I also did the character models.
